Rainbow Fruit Wraps

Ingredients

Some examples of fruit to use

  • Strawberries
  • Oranges or Satsuma
  • Pineapple
  • Kiwi
  • Blueberries
  • 2 tortillas
  • Creamy/thick yogurt (e.g. Greek yogurt)

Equipment

Small knife, chopping board, tablespoon, spreading knife.

Instructions

  • Get your child to pick so they can learn the different colours and fruits
  • Slice the fruits on the chopping board
  • Lay the tortillas out flat
  • Spread 2 tablespoons of your choice of thick yogurt on each one, leaving a 1/2 inch border
  • Layer each colour of fruit in a row to make a rainbow
  • Roll up the wrap and serve

Hummus and Vegetables

Ingredients

Hummus

  • 400g (13oz) can chick peas
  • 1⁄2 tsp ground cumin
  • 1 garlic clove
  • 3 tbsp. olive oil
  • 2 tbsp. tahini paste
  • 1 tsp baking powder
  • 1⁄2 lemon (juiced)

This can be provided already prepared if there are not the resources to make it during the session

Dippers
Cucumber, carrots, celery or any favourite vegetables

Equipment

Small knife, chopping board, mixing bowl, spoon, food processer

Instructions

Hummus

  • Drain and then rinse the chick peas. Tip them into the food processor, add the remaining ingredients, and blend until smooth

Dippers

  • Slice the vegetables into bite size pieces for dipping
  • You can use a peeler to make ribbons if you have one available

Banana Sandwich

Ingredients

  • A ripe banana
  • 2 slices of bread (brown/white)
  • Dairy butter (optional non diary spreads such as nut butters (almond, cashew, hazelnut, peanut or fruit spread)

Equipment

Small knife, chopping board, and butter knife

Instructions

  • 2 slices of bread (Optional: cut the crusts)
  • Use butter knife to spread thinly the butter/spread on both the slices
  • Use small knife to thinly slice the banana
  • Arrange the banana slices on top of one slice of bread
  • Place the 2nd slice of bread on top
  • Use knife to cut sandwich in the middle – tell your child this is 2 halves
  • Cut the half sandwich in the middle – tell your child this is now 4 quarters

Introducing mathematics

Numbers
1 whole sandwich (uncut)
2 x half sandwich (cut in the middle)
4 x quarters (half sandwiches cut in half again)

Shapes
Square, Oblong – use shape cutters if available

Picnic Salad

This recipe is a simplified version of a traditional Greek Salad. You could substitute the feta with a different cheese if you prefer. Dressing is optional.

Ingredients

  • Wholemeal pitta bread
  • Cucumber
  • Small tomatoes
  • Optional – 1⁄2 red onion (thinly sliced)
  • Cheese – feta/cheddar/halloumi (cut in to chunks)
  • Chick peas (optional)

Dressing

  • Oil and vinegar
  • Mayonnaise

Equipment

Small knife, chopping board, mixing bowl, spoon

Instructions

  • Slice the cucumber into bite size pieces
  • Cut tomatoes (quartered)
  • Cut onion into thin slices
  • Cut cheese into chunks
  • Mix the vegetables together and scatter cheese on top
  • Cut pitta bread in half and spoon into pitta bread

Rainbow Fruit Skewers

Ingredients

  • Raspberries
  • Hulled strawberries
  • Tangerine segments
  • Cubed peeled mango
  • Pineapple chunks
  • Green grapes
  • Red grapes
  • Blueberries

Equipment

Small knife, chopping board, skewer sticks

Instructions

  • Get your child to pick the order to learn the colours and different fruits i.e. 1 raspberry, 1 hulled strawberry, 1 tangerine segment, 1 cube of peeled mango, 1 chunk of peeled pineapple, 1 green and 1 red grape, and finish off with 2 blueberries.
  • Thread pieces of fruit on to each skewer stick, alternating the fruit to get variety of colour
